Pancakes anyone?

Waking up to a good breakfast will definitely make one's day. What makes a good breakfast then? Nasi lemak? Thosai? Cereal with milk? Hot cocoa with some biscuits? Any of these surely makes a good breakfast...if it's added with a dash of love...Many people often think that making a wholesome breakfast is troublesome. Heck, that's a myth! Here's an easy, no fuss recipe to kick start your day:

EASY, BASIC PANCAKE
(Yield: 2-3 servings)
Blueberry pancakes and smoked sausages with light tartar dressing


Ingredients:
  • 100g wholewheat or all purpose flour
  • 1 medium sized egg
  • 180mL milk
  • 1/2 teaspoon vanilla essence
  • 1 teaspoon baking powder
  • 2 teaspoon sugar (optional: 1 teaspoon cinnamon powder)
  • dash of salt
  • butter
Directions:
  1. Sieve the flour and baking powder into a mixing bowl. Add in egg, vanilla essence, sugar/cinnamon and salt. Mix and gradually add in milk. Mix well until lumps are gone to make a smooth batter. Add in a little water if the batter is too thick, add a little flour if batter is too thin.  
  2. Heat a flat bottom nonstick pan with a little butter. Using a ladle, spoon in some batter to coat the base of the pan thinly. Tilt the pan so that the mixture spreads evenly. Cook over moderate heat until batter looks dry on the top and begins to brown at the edges. Flip the pancake and cook until lightly golden on the other side.
  3. Stack up and serve with your favourite choice of toppings.
Great topping suggetions:
  1. Yogurt, honey, maple syrup, raspberry syrup, chocolate sauce
  2. Your favourite choice of fruits: kiwi, berries, oranges, banana
  3. Cinnamon sprinkle
  4. Grated cheese 
Note:
  1. I often omit the sugar and use cinnamon as substitute. Cinnamon has nice, sugary aroma and is sweet tasting. Some of its claimed health benefits: mimic insulin (i.e. it has regulatory effect on blood sugar), lower LDL cholesterol..
  2. You may add 1/2 - 1 teaspoon of milled flaxseed into the pancake batter. Flaxseed has wonderful health benefits. Some studies have shown that it could potentially reduce the risk of heart disease, cancer, stroke and diabetes.
