Beef & Spinach Lasagna

JW & I love, love, love lasagna...but sad to say, there's no eatery serving good lasagna here in Tawau....and so I experimented on making one. It turned out perfectly, we ate like gluttons, and my man demanded for more the next week!

Lasagna can be easily made at home (ya, you heard me right, EASY!). Here's the recipe which I'm  proud  to share.
The  secret to making an  orgasmic  lasagna lies on the amount  of cheese used  and the meat sauce.  Do not stinge  on cheese! Do not overdo it as well, especially if you do not  have a very strong  liking  towards  cheesy  stuff. As  for the  meat sauce, I always prefer making my own rather than buying those ready-made bottled pasta sauces.

To those on strict diets, this recipe is NOT for you. The high calorie content may ruin your diet plan. 

BEEF & SPINACH LASAGNA
(Serving size: 2 person)

Ingredients:
   •  150 g lean gound beef (90% lean)
   •  1 small onion (chopped)
   •  20 g carrots (chopped)
   •  4 cloves garlic (minced)
   •  350 mL tomato puree
   •  1 cup fresh spinach (chopped & squeezed dry –use   
       only the leaves & fine stems)
   •  1 cup ricotta cheese/ parmesan + mozzarella cheese 
       – grated 
   •  3 pieces lasagna noodles (get those with no   
      precooking required)
   •  light oil or butter
   •  black pepper*
   •  salt* 
   •  dried oregano*
   •  dried basil*
* to taste    

Directions:
  1. In a skillet, cook onions, garlic & carrots with a little oil/butter, over medium heat. Add thawed meat and cook until no longer pink. Stir in tomato puree, salt, pepper, basil & oregano.   Simmer for 1-2 minutes until it boils.
  2. In a large bowl, mix well the spinach with ¾ of the cheese. 
  3. Spread ½ cup of meat sauce onto greased loaf pan. Top with a noodle sheet. Spread half of the spinach mixture up to the edge of the noodle, followed by ½ cup meat sauce up. Repeat layers. Top the remaining (topmost) noodle sheet with remaining meat sauce and cheese. 
  4. Cover with aluminium foil & bake at 200°C for 30 minutes. Uncover and bake for another 5 minutes or until bubbly, if required. Let it stand for 5 minutes before cutting.

Note: If you do not have mozarella/ parmesan/ ricotta, you may substitute with cheddar cheese. It won't taste as good but still do fine. Use approxiamtely 5-6 slices..
